Dinner last night was a delicious meal cooked entirely in the slow cooker. And there was hardly any preparation required! Dinner was ready to be served as soon as I got home. All I did was place 2 frozen chicken breasts, a bag of frozen baby carrots, a bag of frozen green beans, and two cubed potatoes in my slow cooker, and drizzled my favorite Tuscan-herb flavored olive oil over the top. Everything came out so tender – and tasty! I am used to steaming my veggies, but slow cooking them brought out so much more flavor. Next time I’ll add some diced onions. This nutritious dinner totalled around 350 calories, and was very filling!
